The Memmola brothers extract the "green gold" from the small green-purple drupe with meticulous dedication, through the use of cutting-edge machinery, preserving all the organoleptic characteristics. The presence of antioxidant substances "tocopherols and polyphenols" and monounsaturated acids, which enhance the fragrance and exquisiteness of the typical products of that food and cultural identity known throughout the world as the "Mediterranean diet".
Collection and processing
The processing is carried out at low temperatures and the various phases have not changed much over the centuries and are represented by crushing without heating and emulsions, by churning, by extraction with reduced addition of water, by centrifugation, by clarification by decantation, by conservation and bottling. All this occurs with constant control of the process parameters and instant sanitization of the plant (according to the Haccp manual).
